Anyway… given that Christmas is only a few weeks away, I thought it was a pretty fab time to share one of my favourite variations on classic Tim Tam cheesecake balls. And you know how much I LOVE Tim Tam cheesecake balls. If you haven’t tried my caramel version – dear lordy, go and do that RIGHT now!!
A lot of you have told me that you want to see recipes that can also double as Christmas gifts. And so my friends, here is one super fab, incredibly easy, no-bake foodie gift recipe that you’re going to love. In fact, you’ll love them so much, you won’t want to give them away!
My Baileys Tim Tam Cheesecake Balls are made from white chocolate Tim Tams, cream cheese and a teensy little shot of Baileys liqueur (PS. I just had to spell check that… see, I told you I had tired brain!). Oh and then, if you thought things couldn’t get any better, these babies are dipped in white chocolate and drizzled with milk chocolate. Because that’s how things roll around here.
If you’re giving these away as a gift, simply pop them into a little cellophane bag and tie with a cutesy-wootsy ribbon. Or put them into a spesh box filled with tissue paper for an uber-luxe finish (hehe now I’m just using ridiculous words that seem normal when you’re sleeeeeepy!). Or better yet, pop these up the back of your fridge where no-one can see them and sneak one every few hours when the sugar cravings come-a-callin’.
In all seriousness though, please make a batch of these delicious little bites. They really are a gorgeous change from the traditional truffles or Tim Tam balls… and they’re incredibly addictive (just so you know – I’d hate to have not warned you).

- 300g white chocolate, for dipping
