Meat Loaf Squares Recipe

Ingredients
  1. 1 1/2 lb (750 g) lean ground beef
  2. 2 cups (500 mL) Rice Chex* cereal, finely crushed
  3. 1 can (8 oz) tomato sauce (about 1 cup/250 mL)
  4. 1 medium carrot, grated (about 1 cup/250 mL)
  5. 1/4 cup (50 mL) chopped fresh parsley
  6. 3/4 tsp (3 mL) salt
  7. 3/4 tsp (3 mL) pepper
  8. 2 eggs, slightly beaten
  9. 3 cups (750 mL) prepared mashed potatoes
  10. 1/2 cup (125 mL) ketchup

  2. Heat oven to 375ºF. Grease 9-inch square baking pan.

  4. In large bowl, mix beef, cereal, tomato sauce, carrot, parsley, salt, pepper and eggs just until combined. Press half of beef mixture into pan. Spread mashed potatoes on top; cover with remaining beef mixture. Spread ketchup on top.

  6. Bake 50 to 60 minutes or until meat thermometer inserted in centre of meat reads 165ºF. Cool 15 minutes; cut into 4 squares.
